Christmas Comfort Food: Frankie’s Lobster Pie

Last year Christmas Eve was a balmy, LA-like 60 degrees. This year, Medford has plenty of white stuff on the ground for a more traditional white Christmas, so special comfort foods are in order. InsideMedford.com called upon resident chef Frankie Imbergamo for a sure crowd-pleasing recipe for the holiday season- lobster pie.

Frankie’s Lobster Pie

1 stick melted butter
2 cups Ritz cracker crumbs
1 Tbsp. parsley
Pinch of salt
Pinch of ground black pepper
1/2 cup grated Romano cheese
1 Tbsp. oil
1 pound cooked lobster meat (tails and knuckles) or 6 lobsters, boiled and meat removed

Coat casserole dish with some melted butter. Place lobster meat in dish. In a bowl, mix Ritz cracker crumbs, parsley, salt, pepper, Romano cheese, 1/2 stick melted butter, and oil. Mix well. Top lobster meat in casserole dish with crumb mixture. Drizzle with some melted butter. Cover with foil and bake in 350 degree oven for fifteen minutes. Remove foil and bake another five minutes.
