New Chef, Exec Join Salvatore’s Restaurant Group
|Lupoli Companies is pleased to announce that Chef Vittorio Paone joined Salvatore’s Restaurant Group as Corporate Chef in June 2011. Vittorio will oversee day to day operation in all kitchens, along with menu planning, product control and product standards. Long term, Vittorio will focus on the standardization of all kitchen operations to maximize profitability. Kitchen personal throughout Salvatore’s Restaurant Group will report to him.
Vittorio began his career in the food industry in 1979 working in his uncle’s pastry shop, where he gained vast experience of the business. Early in his career, he was mentored by visiting Italian chefs and now specializes in the cooking styles from various regions of Italy. He has overseen restaurant openings for 22 locations, ranging from steakhouses to fine Italian dining establishments. Recent experience includes Corporate Group Chef at Il Panino and the Taj Hotel in Boston.
Vittorio possesses an Associate Degree in Culinary Arts and Bachelors Degree in Food Service Management. He is also a member of the Chaine Des Rotisseurs. He resides in northern Massachusetts with his wife Maria, and children Erika and Alessandro.
Lupoli Companies is pleased to announce that hospitality industry veteran, Marc Sachs, joined Salvatore’s Restaurant Group as Corporate Director of Hospitality and Beverage in June, 2011. Marc takes responsibility for ensuring premium and distinctive guest experiences at each of the growing, Lawrence-based restaurants. Marc designs, implements, and trains the adult beverage program that complements the abundant, fresh Italian cuisine for which Salvatore’s is known.
Service is the highest calling, and Marc brings that core value with him to Salvatore’s. Marc is a distinguished Guest Lecturer at Johnson & Wales University in Providence, where he specializes in teaching front of the house hospitality and service.
Marc began his career in New York City as a member of the opening service staff of Windows on the World in 1976. As an experienced part of the Boston scene, Marc shared his talents with the Copley Plaza Hotel and the Hyatt Regency in Cambridge. He then led Merchant’s Wine & Spirits to prominence as a fine wine and spirit retailer in the Financial District. Most recently, Marc was Corporate Beverage Manager at Uno Chicago Grill. He is a frequent contributor and speaker at both the Cheers and Vibe Beverage Conferences.
Born and raised in the Bronx, and a graduate of the Bronx High School of Science, Marc lives in Arlington, MA, proud father to sixteen year old Zoe, and thirteen year old Elias.
